The Isaki is the typical fish that is grilled with salt, eaten during summer. Nonetheless, with improvements in distribution in recent years, it can now often be eaten raw and enjoyed as a sushi topping.
It is a white-fleshed fish with a distinctive briny, seaside aroma. Some people dislike this smell, while others feel it is exactly what gives isaki its charm.
Although it is famous as a summer delicacy thanks to the fat it carries then, its flavour holds up well in other seasons too, so it can be enjoyed all year round.
