In the past, this fish used to be out of reach for the common people as it was not distributed commonly. However, with the development in farming technology in recent years, the Great Amberjack can now be eaten even in conveyor belt sushi places.

What sets it apart from yellowtail is its texture: the fresher it is, the firmer and springier the bite. Unlike yellowtail, whose umami deepens as it grows larger, the amberjack already carries good fat and flavour even as a juvenile. From affordable conveyor-belt chains to higher-end sushi restaurants, kanpachi appears across a wide range of counters. It stays popular with every generation and is enjoyed throughout the year.

It is often said that yellowtail is famous in winter while amberjack is famous in summer. However, as the taste does not deteriorate all year round, there are also people who prefer Amberjack during winter.
