Tuna you can enjoy casually
Among the many kinds of tuna, such as bluefin, bigeye and yellowfin, albacore is generally the most affordable. Originally it was mainly used for canned tuna, but its soft, tasty texture made it one of the standard sushi toppings, especially at conveyor-belt sushi restaurants. It is also popular in supermarket sashimi sections for offering excellent value. The bin-toro often served at conveyor-belt sushi shops is the fattier part of this albacore. Compared with bluefin and the like it has pinkish flesh and a sweeter flavour.
Besides bincho, it goes by names such as binnaga, tombo and kanta depending on the region.
