Kinki キンキ

The kinki (officially "kichiji") is a red fish caught in the deep waters off Hokkaido and Tohoku. Its elegant white flesh holds an astonishing amount of fat, earning it the nickname "red jewel" among premium fish. It was once a familiar fish for simmering or salt-grilling, but as catches declined it has grown ever more scarce. You will rarely see it at the supermarket, and even as a sushi topping it is a lucky find. As in the photo, it is often served with the skin lightly seared — the moment the aroma and sweetness bloom together, it becomes a truly superb piece.
