Long ago, footwear such as shoes and straw sandals was called gesoku. From that meaning, sushi chefs of old began using geso as slang for a squid's legs as well, and it spread widely to reach the present day.

The geso sushi in circulation mostly uses imported frozen spear squid. It is often topped with condiments and is very refreshing, making it perfect as a palate cleanser.
