Enoki エノキ

A great rarity among sushi toppings: a piece made with enoki mushrooms. There are several ways to prepare it — simmered in soy sauce and mirin, or cured "kobu-jime" style between kombu sheets to layer on umami. Every version pairs remarkably well with vinegared rice, and with the enoki's distinctive texture on top, it makes a genuinely delicious piece. In Tokyo, Manten Sushi — a restaurant that has been gathering quite a following in recent years — is known to include it in almost every omakase course.
