Botan-ebi has tender flesh, a rich, almost sticky mouthfeel, and an intense sweetness that seems to melt away. Among the many dozens of shrimp varieties, it is considered one of the finest luxury types. Depending on the timing, it may be served together with its roe, whose flavor and texture are superb. Some sushi restaurants also serve the wata, the rich innards found in the head and other parts, letting you enjoy each shop's own style.

Among familiar sushi toppings it is very similar to ama-ebi, but ama-ebi is smaller and softer in texture.

As an aside, botan-ebi and ama-ebi have an unusual life cycle: they live as males for their first several years, then all change into females.

Origin: Hokkaido and prefectures along the Sea of Japan Season: males in spring, females in autumn
